today i learned – sat 16th sept 2017

isnโ€™t it annoying that all that food you buy every week, goes off if it isnโ€™t eaten ๐Ÿ˜• you work super hard and then end up with food that eventually goes off.

if it annoys you as much as it does me … then this post could most definitely be the one for you ๐Ÿ˜

#tdil that honey never spoils … like, never spoils ๐Ÿ

well, that statement is 99% true – honey will never spoil as long as it is kept in its natural state … if you donโ€™t store it in a well sealed, dry, place then you could be in for trouble!

anyway! how on earth does honey manage to be one of the only foods on earth that doesnโ€™t go bad? ๐Ÿค”. thereโ€™s actually a few little reasons ๐Ÿ‘๐Ÿป

firstly, it all comes down to honey being a sugar ๐Ÿญ. sugar is hygroscopic, which means that it doesnโ€™t contain much water … this bit is super important.

you see, the lack of moisture means that very few microorganisms/bacteria can survive on the honey ๐Ÿ™Œ๐Ÿป #winning. those that can get past the whole low moisture environment thing are then usually foiled by the acidity of honey.

one of the final factors (there are a couple of others) is the fact that the bees vomit the nectar into the honey comb (#grim ๐Ÿ˜ท) . helpfully, a beeโ€™s stomach contains a host of enzymes that work to break down bad stuff that tries to live on the honey ๐Ÿ‘Œ๐Ÿป.

so yeah, if you ever happen to find a pot of 5000 year old honey (that has been stored properly), feel free to have a nibble ๐Ÿ™‚ … just donโ€™t feed it to a baby because thatโ€™s bad!
