isn’t it annoying that all that food you buy every week, goes off if it isn’t eaten 😕 you work super hard and then end up with food that eventually goes off.

well, that statement is 99% true – honey will never spoil as long as it is kept in its natural state … if you don’t store it in a well sealed, dry, place then you could be in for trouble!
anyway! how on earth does honey manage to be one of the only foods on earth that doesn’t go bad? 🤔. there’s actually a few little reasons 👍🏻
firstly, it all comes down to honey being a sugar 🍭. sugar is hygroscopic, which means that it doesn’t contain much water … this bit is super important.
you see, the lack of moisture means that very few microorganisms/bacteria can survive on the honey 🙌🏻 #winning. those that can get past the whole low moisture environment thing are then usually foiled by the acidity of honey.
one of the final factors (there are a couple of others) is the fact that the bees vomit the nectar into the honey comb (#grim 😷) . helpfully, a bee’s stomach contains a host of enzymes that work to break down bad stuff that tries to live on the honey 👌🏻.
so yeah, if you ever happen to find a pot of 5000 year old honey (that has been stored properly), feel free to have a nibble 🙂 … just don’t feed it to a baby because that’s bad!
